That’s right, watermelon tuna is now a thing as an obscure but innovative vegan dish just in time for ‘Veganuary’.

Wagamama has launched watermelon tuna, a new vegan dish made from dehydrated watermelon which sliced, seared and served hot.

By appearance alone, the presentation and texture are like tuna sashimi, but has the flavour of watermelon.

The ‘tuna’ is then dressed with miso sesame sauce and comes with white rice in soy seasoning, pickled radish, kale, stem broccoli, avocado, edamame and tofu guacamole.

Group executive chef, Steve Mangleshot, said: “My team and I are always excited about creating new dishes, we love to innovate and make people think about the food they are eating.

“The watermelon tuna dish is all about innovation and creating exceptional vegan food for our guests.

“The joy of being able to produce really cool food that is both vegan and tastes fantastic at the same time is what it’s all about.”

This isn’t the only vegan option available, as last year the pan Asian restaurant chain launched a vegan egg.

Veganuary, a non-profit organization that encourages people to become vegan for January, are supporting the launch of the new dish.

Zoe West, a spokesperson for Veganuary, said: “Veganuary is creating a new wave of consumers with strong ethics and a big appetite!

“This a real opportunity for businesses to improve and expand their vegan offerings for the growing climate-conscious audience.

“We’re delighted that Wagamama has risen to this challenge - helping people to live more lightly on the earth while still eating food they love – we can’t wait to try their new Suika Tuna dish!”
